Peanut Butter and Honey Granola Bars
Ingredients: 3 3/4
cups rolled oats (quick cooking), 1 cup chopped nuts, 3/4 cup honey, 1/2
cup dried cranberries, 1/2 cup raisins, 1/2 cup peanut butter, 1 beaten
egg, 1 teaspoon vanilla, 1 cup coconut, 2/3 cup melted butter.
Directions: Mix oats,
coconut, and nuts with melted butter, spread on a baking sheet and toast
at 350 degrees for 20 minutes. In a large bowl, mix remaining
ingredients, add toasted ingredients, press into a lightly geased 13x9
baking pan, bake 22 minutes at 350 degress. Cool slightly on a wire
rack, but into desired size bars. Cool completely pan.
Do It Yourself Granola
Use any combination of
the following: sunflower seeds, almonds, cashews, peanuts, raisins,
craisins, chopped dates, M & M's, and coconut. Mix them together in
a big bowl and store in an airtight container. Use as a snack to keep
you going etween meals.
